About the Book

Charel Scheele grew up in the family baking business during the hard times of the German occupation of the Netherlands during the Second World War. He describes his experiences both tragic and humorous. He found out that the steady rhythm of kneading the dough was soothing to the nerves and that punching the dough relieved frustrations. The added benefit was a tantalizing and delicious loaf of bread that he could share with others and thus increase his joy despite the hard times.

In this book you will find recipes that are not only delicious but also very nutritious.
There are also recipes for spelt bread that are beneficial for people who are allergic to wheat and yeast.


About the Author

Charel Scheele, a retired professional baker on both continents, the European and the American, graduated with high honors from two European baking schools. He has previously published 4 books on bread baking: Old World Breads, More Old World Breads...and Soups Too, Adobe Oven for Old World Breads and Old World Breads from Your Bread Machine. He and his wife live in New Mexico and he still bakes bread as a hobby.
