The dinner shift ended and the cooks were breaking down the line. Just as the rice was thrown away, a ticket came in for a large to-go order. The order called for one large container of rice. A cook took an empty water pitcher and scooped the trash-can rice into a to-go container. Mid-scoop, Joan entered the kitchen. She was mortified. The cook explained that the order had just come in and the rice on top wasn't dirty. Joan shouted, “The to-go order is for me!” The embarrassed cook said, “Oh, I didn't know! I make fresh for you!” Joan explained that it didn't matter who the rice was intended for. If it's in the garbage, it stays in the garbage. Between you and me… I think it would have been okay to give Joan the trash-can rice.

About the Book
Kenneth Suna hoped to become a professional wrestler, but an eight-foot drop onto a cement floor quickly ended his fifteen-year dream. He found work at the Texas Café, a Washington, D.C., neighborhood restaurant and later at White Spice, a high-end seafood restaurant. In this memoir, Suna provides a unique glimpse into the restaurant industry from the perspective of a young man at the beginning of his career.

Suna is not a chef, nor does he own a restaurant. He was an employee at the bottom rung, and he saw it all—good and bad management, the treatment of immigrants, endearing stories, and shocking kitchen scenes. Eating out will never be the same.
About the Author
Kenneth Suna attended a wrestling training school in the hopes of becoming a professional wrestler. After an injury set him back, he returned home and found work in the restaurant industry. It's a Miracle They Ain't Dead Yet is Suna's debut book.
