About the Book
"Soul Food" is a term coined by African Americans to capture the uniqueness of the cooking style utilized for themselves, families and friends, all prepared with love, care and lots of soul. Many of these foods are rich in vitamins and minerals, but are also rich or high in total fat, saturated fat, cholesterol and sodium (salt).
"Cutting back on salt, as well as providing recipes that are lower in sodium, fat, and cholesterol", will help to promote "heart-healthy living".
About the Author
Cheryl Campbell Atkinson PhD, RD., LDN.
Received her B.S. in Food Science and Management from Pratt Institute in Brooklyn New York, her M.P.H. in Nutrition from Tulane University in New Orleans, Louisiana and her Ph.D. in International Nutrition from Cornell University. She is a registered dietitian (RD) and a licensed dietitian/nutritionist (LDN), and a member of both the American Dietetic Association and the American Association of Family and Consumer Sciences. She has worked in private practice as a clinical dietitian in Baltimore, Maryland and New Orleans, Louisiana, and is presently a faculty member at Southern University A&M College, Baton Rouge, Louisiana.
