Dr. Judith C. Rodriguez is a Registered Dietitian with over 25 years experience working in nutrition education. She is a Latina with a special interest in Hispanic health, nutrition, and cultural foods. She is a Fellow of the American Dietetic Association and Chairperson of the Department of Public Health at the University of North Florida in Jacksonville, Florida.
