About the Author

Melissa Corea is a graduate of the Pennsylvania State University, with a Bachelor’s of Science degree in Hotel, Restaurant and Institutional Management. During her tenure at PSU, Melissa was a teaching assistant and worked under several chefs and professors, gaining invaluable experience in the culinary arena. The many years of training and education received, under these professionals, has provided Melissa with extensive knowledge and experience in cooking, culinary execution, menu design and recipe creation. Melissa took all of these skills and utilized them to manage hotels and restaurants throughout the county. Melissa is the former owner of “Temperance House – Inn . Restaurant . Tavern . Banquets”, located outside of Philadelphia. Melissa led the endeavor of taking a long-time, closed treasure and turned it into a thriving business with multiple menus and quality products. Her book reflects some of the menu items, featured on the opening menus, especially items in the pub fare section. Melissa is currently the principal owner of COREA.Consulting 21, LLC where she consults for restaurants, hotels, and other small businesses, offering education in management, hierarchy development, menu design, cost and controls, culinary instruction and many other criteria, depending on client ‘s requirements. Melissa has recently expanded COREA.Consulting 21, LLC offering a personal chef division, for non-professional consumers, featuring personalized cooking instruction, household budget preparation and enjoyable and entertaining group classes, all of which are based around the client’s menu preferences.
